Instant → Active Dry: ÷ 0.75
Active Dry → Instant: × 0.75
Instant → Fresh: ÷ 0.32

Example

Recipe calls for 10g active dry yeast: 10 × 0.75 = 7.5g instant yeast. Or 10 ÷ 0.32 = 31.25g fresh yeast.

Frequently Asked Questions

  • Multiply active dry yeast by 0.75 to get instant yeast. If a recipe calls for 8g active dry, use 6g instant.
  • Yes — fresh yeast is about 3x the weight of instant. If a recipe calls for 7g instant, use about 22g fresh yeast.
  • As a general guide, replace 1 packet (7g) instant yeast with about 227g (8oz) of active sourdough starter, reducing flour and water in the recipe by 113g each.
